Ou comment utiliser très sympathiquement des restes de légumes, en deux temps trois mouvements …

Pour 16 samoussas
3 pommes de terre (chair ferme)
en vrac : restes de légumes, pour moi 1/4 de poivron rouge en petits dés, 1 bol de jardinière petits pois / carottes. A peu près tout est utilisable, à part les légumes qui rendent beaucoup d’eau comme les courgettes ou les épinards.

Faire revenir les pommes de terre coupés en petits cubes, et les éventuel autres légumes un peu longs à cuire (genre carottes, poivrons …). Ajouter un verre d’eau et laisser cuire sur feu doux une quinzaine de minutes.
Ajouter les autres légumes, laisser chauffer, ajouter de l’eau et laisser cuire encore 15 à 20 min. Ajouter les épices. Il faut que les légumes commencent à se défaire et tourner en purée, sinon le pliage des samoussas sera difficile.
Quand la farce est prête, garnir et plier les feuilles de brick (comme chez CoCOnut). Les faire cuire au four à 180º pendant 15 min.
Servir avec une petite salade.
